Cake Flavours


Caramel Cake

As with the white chocolate mud cake, this sponge cake offers a dense but moist texture.  Not as white in its finished baked appearance, but it will satisfy the taste buds of any party goer.  As the cocoa bean is grown within a nut kernel, it may not be suitable for those with a nut allergy.


Dundee Cake

This is a slightly lighter cake than the traditional rich fruit cake.  Again, this cake is packed full of spices and fruit and is traditionally flavoured with dark rum or Scottish whiskey.  This cake is well suited for a more relaxed celebratory event but is equally adaptable for a wedding cake if the richness of the classic fruit cake is not required. This cake can have the nuts taken out of the recipe but it will be covered with marzipan, so will not be suitable for any persons suffering from any nut allergy.  This cake will keep for several months if wrapped in appropriate wrappings.


Classic Rich Fruit

A truly majestic cake, it is full of warm spices and fruit.  It can be matured with most flavoured alcohol, but the classics would include whiskey, rum, sherry or brandy.  For the best possible results for both texture and flavour, it is highly recommended that any fruit cake be ordered at least 3 months prior to being used for a celebration event. This cake can have the nuts taken out of the recipe but it will be covered with marzipan, so will not be suitable for any persons suffering from any nut allergy.  This cake will keep for several months if wrapped in appropriate wrappings.


Red Velvet Cake

This is the dramatic American cake!  Everyone will appreciate the moist texture to this cake, together with the dramatic red sponge flavoured with cocoa!  It is a cake for a romantic celebration; Valentine’s Day, engagement party, a “will you marry me?” cake; the occasion will only be limited by your imagination.  Covered in white Belgium chocolate ganache, red regal ice and hearts and roses will make this a cake to celebrate that truly romantic event. Once cut, this cake should keep for up to a week if wrapped in appropriate wrappings and air tight storage.  As the cocoa bean is grown within a nut kernel, it may not be suitable for those with a nut allergy.


Classic Chocolate Cake

This is a favourite of children, young and old.  It is the ideal flavour and texture for the birthday cake, anniversary cake, mother’s day cake, christening cake – the list is only limited by one’s lack of imagination!  For the child’s celebration cake, butter cream with added melted chocolate is advisable, as the ganache filling and covering will be too rich for the younger palette!  On the other hand, for the adult child at heart, the richer ganache is very well suited. This cake lends itself to single, twice or thrice layering, depending on your requirements. Dark Chocolate Mud Cake

This is a real treat for those who love chocolate!  It has a very dense texture which is very moist.  Flavoured with coffee liqueur and covered with dark Belgium chocolate ganache, it is a cake that is very well suited for the adolescent and mature party goers for all celebrations.  Again, this cake lends itself very well to being layered once, twice or thrice, this just means that you get your lips around more luxurious chocolate ganache! Marbled Chocolate Cake

For those that want a bit of a surprise when the cake is cut and for those who cannot make up their minds as to which flavour to go for – try mixing the two!  This cake is a light sponge with the added surprise of chocolate chips within the texture.  The filling and covering would be best suited with a milk Belgium chocolate ganache so as not to overpower either the white or dark chocolate sponge mix.  This cake should keep for up to a week once cut if kept in appropriate wrappings.  As the cocoa bean is grown within a nut kernel, it may not be suitable for those with a nut allergy.


Classic Victoria Sponge Cake

A classic recipe loved by all and is very well suited to all celebratory events.  This light and airy cake is light in texture and can be filled with the classic conserve of your choice and butter cream combination.  On the other hand, for a more luxurious cake finish, use white chocolate ganache flavoured with vanilla extract for a more penetrating flavour.  This cake is used often as a wedding cake in place of the fruit cake.  This cake should keep for up to a week once cut if kept in appropriate wrappings.  If covered in ganache, the cocoa bean is grown within a nut kernel, it may not be suitable for those with a nut allergy.


White Chocolate Mud Cake

Orange Cake

This is a light and airy sponge cake flavoured with grated orange rind and Seville orange extract.  It can be layered and filled with rich butter cream, again flavoured with orange extract and covered in regal ice to create the perfect template for your celebration theme.  If you want a more luxurious filling, try white Belgium chocolate ganache with a hint of orange to match the flavour of the sponge. This cake will keep for up to a week if stored and wrapped in the appropriate wrappings.


Carrot Cake

This classic favourite sponge cake is packed full of flavour and texture and is increasingly popular as the sponge of choice for a celebration.  It is a rich moist cake with a hint of mixed spice and is suitable for an adult celebration cake for weddings, birthdays, indeed for any celebration you can imagine.  It can be layered and/or covered in the classic cream cheese frosting and is best covered in regal icing to add to its luxurious taste. Madeira Cake

This cake has a slightly more rich and dense texture than the orange and lemon cakes, and because of this, its storage life is just a few days longer.  This cake is more suited to a mature celebration event, and can be covered in either butter cream or white Belgium chocolate ganache.  It can be layered or left plain, depending on your requirements.


Coconut Cake

This light textured cake is packed full of texture from the desiccated coconut and flavoured with coconut essence and is ideal as an alternative sponge cake for a wedding or birthday celebration.  This cake is best covered with butter cream with a hint of coconut, and having a white or cream regal iced canvas on which to work the magic of your party theme.  Because of its light texture, this cake should keep for a week if kept in the appropriate wrappings.  Because this cake contains desiccated coconut, it will not be suitable for persons who suffer from any form of nut allergy.


Lemon Cake

This is a light and airy sponge cake flavoured with grated lemon zest and lemon extract.  It can be layered and filled with rich butter cream, again flavoured with lemon extract and covered in regal ice to create the perfect template for your celebration theme.  If you want a more luxurious filling, try white Belgium chocolate ganache with a hint of lemon to match the flavour of the sponge or Lemoncello also works well.  The flavour of this cake is suitable for both weddings and birthday cakes.  This cake will keep for up to a week if stored and wrapped in the appropriate wrappings.
